Dr. Nikhil Kumar Mahnot is an Assistant Professor in the Department of Food Technology at Rajiv Gandhi University (A Central University), Rono Hills, Doimukh, Arunachal Pradesh. He brings over significant experience in teaching and research experience in food technology, having previously served as Assistant Professor in the Department of Bioengineering and Technology at Gauhati University, Assam. He holds a PhD and M.Tech. from Tezpur University, with specialization in Food Engineering and Technology. He was awarded the prestigious Nehru-Fulbright Doctoral Research Fellowship at Purdue University, USA, and has also received the DST-INSPIRE Fellowship for his doctoral research. His research focuses on developing innovative and sustainable approaches for food processing and preservation, with particular emphasis on cold plasma technology, emerging non-thermal processing, food safety and quality assessment, functional foods, bioactive compounds, and value addition of underutilized food resources. He has authored around 20 research publications in international Scopus-indexed journals and contributed more than six book chapters with renowned publishers, alongside a patent granted by the United States Patent and Trademark Office (USPTO). His work has garnered over 1,250 citations, with an h-index of 15. He has guided 19 students through their Master's dissertations, currently mentors two PhD scholars, and actively reviews for international journals while also serving as an editorial board member of international journals. He is a life member of the Association of Food Scientists and Technologists, India. He actively contributes to academic outreach through invited lectures, conferences, workshops, and professional activities in food science and technology.
